Brixham, which has been at the centre of the area's fishing industry for centuries. Lyme Regis, with a historic cobb and harbour area. Dartmouth, a unique costal town with a cobbled market which supplies fresh local produce.

Popcorn Cod Recipe

  PREPARATION AND METHOD
 
  INGREDIENTS
     
 
1. To start, prepare the batter for the cod. In a bowl add the flour and baking powder, pour the milk into the bowl and whisk it to form a thick batter. If it's too thick add a little milk to loosen it.
2. Fold the diced cod, shallots and spring onions into the bowl of batter mixture. Season with salt and pepper and put to one side.
3. Now prepare the salad, scrub the potatoes. Using an apple corer, punch out cylinder shapes in the potatoes.
4. In a large pan, bring some salted water to the boil. Add the potatoes and simmer on a medium heat until almost cooked, approximately 15 minutes.
5. When cooked, gently remove the potatoes from the pan, transfer to a bowl and put to one side.
6. Now heat a deep-fat fryer to 150°C or, fill a large saucepan with oil to a third of the way up. Caution: the hot oil can be very dangerous.
7. Using a teaspoon carefully drop the pieces of the cod mixture into the hot oil. Fry the cod pieces until golden for about 3-4 minutes.
8. With a slotted spoon carefully remove the cod popcorn from the oil. Drain on kitchen towel.
9. Meanwhile, in a large bowl combine the cucumber and potatoes. In a small bowl, mix together the buttermilk, mayonnaise and chives, spoon this into the bowl with the potatoes and cucumber.
10. Separate the cod popcorn into four portions onto plates and serve together with the cucumber and potato salad.
 

Devon Fishmonger cod

Popcorn Cod - Serves 4
150g of plain flour
2 ½ teaspoons of baking powder
125ml of milk
200g of cod fillet, cut into 1cm cubes
2 chopped shallots
2 chopped spring onions
1 pinch of salt
1 pinch of black pepper
1 ltr of vegetable oil

Potato and cucumber salad
4 large potatoes
2 tablespoons of buttermilk
1 cucumber, peeled and cut into ribbons
2 tablespoons of mayonnaise
1 chopped bunch of chives
1 pinch of salt
