The local fishermen we support populate towns along the coastline. These include Beer , a historic fishing town, unspoilt by modern society. Brixham, which has been at the centre of the area's fishing industry for centuries. Lyme Regis, with a historic cobb and harbour area. Dartmouth, a unique costal town with a cobbled market which supplies fresh local produce.

Baked Salmon Recipe

  PREPARATION AND METHOD
 
  INGREDIENTS
     
 
1.

Preheat your oven to 230c (200c for fan) / Gas mark 8.

2. Place the salmon fillet onto a piece of aluminium foil. Season the salmon with salt, pepper, garlic and chopped dill. Place slices of lemon onto the salmon fillet and place a sprig of dill on top of each slice of lemon. Sprinkle the fillet with the chopped spring onions.
3. Cover the salmon with another piece of foil and pinch both pieces together to form a tight seal. Place onto a baking tray or in a large enough baking dish.
4. Bake in the preheated oven for 20 to 25 minutes, until the salmon becomes flakey.
  Serving Suggestion
Serve with seasonal vegetables. For summer occasions cook this recipe on a barbeque, prepared as above.

Baked Salmon Fillet with Garlic and Dill- Serves 6
675g (1½ lb) salmon fillet
3 crushed cloves of garlic
2 chopped sprigs of fresh dill
5 sprigs fresh dill
5 sliced lemon
2 chopped spring onions
salt and freshly ground black pepper
to taste
