We are committed to sourcing from local fishermen. Working together to ensure a sustainable future for both fish, and the fishing industry.

The local fishermen we support populate towns along the coastline. These include Beer , a historic fishing town, unspoilt by modern society. Brixham, which has been at the centre of the area's fishing industry for centuries. Lyme Regis, with a historic cobb and harbour area. Dartmouth, a unique costal town with a cobbled market which supplies fresh local produce.

Cod

Cod was the favourite fish of the British, it was comparatively easy to catch. This cod is hook and line caught off Cornwall from small boats. It can't be compared to cheaper cod, we cut your portions or loins from thick and luscious fillets!

Coley

Coley is one of our biggest sellers, for those willing to experiment, it's a good alternative to cod. Huss is a firm white fish, the "rock salmon" of the fish and chip shop.

Dover sole is one of the best fish, it has a delicate flavour and its flesh is firm. It's available all year, and it's best cooked whole, grilled or fried.

Gilt Head Bream

Bream is very similar to bass.  The same nice, sweet flavour and firm flesh, so easy to cook.  A bit cheaper!

Gurnards have a firm white flesh that holds together well when cooked, so ideal for baking and in fish stews, but we think they're delicious as fillets in good old fish and chips

Many of our customers prefer haddock to cod, it's a bit firmer with larger flakes than cod.

Halibut

Monkfish and halibut are very different but alike in their big size and firm, delicately flavoured white flesh. They are not as expensive as they used to be, but they are probably still correctly called luxury fish. The flesh hangs together well, so they are ideal for kebabs, stews and steaks and for roasting whole.

Herrings were once very abundant, they were the "silver darlings" of the Scottish fishery, and were so cheap that they were used as animal feed  Stocks are rising, so there are reasons for a bit of optimism.

Lemon Sole

Lemon soles and Torbay soles are similar to Dover soles but cheaper! Both benefit from simple cooking as whole fish, but we can also fillet these soles for you.

Megrim. This is a flat fish from the brill and turbot family. It can be cooked like sole or plaice, but doesn't match them for flavour or texture.

Poor old plaice hasn't got a good name, it used to be considered as good enough for the poor, and somehow got a name as boring old "plaice and chips". But it is a superb fish with a fine, moist texture and subtle but distinctive flavour. You'll know it by the orange spots on its dark side.  Flounders, also called "flukes", have a slightly stronger flavour, they are a Spring fish.

Named after Sardinia, lovely sardines are small pilchards, they are oil-rich fish, silver in colour.

Bass looks good and so is a great fish for cooking whole, but we can fillet your bass for you, these fillets will arrive with the skin on. They are popular for home cooking and when eating out because of their fairly robust character, they have more substance than many white fish, and so are easy to cook.
