The local fishermen we support populate towns along the coastline. These include Beer , a historic fishing town, unspoilt by modern society. Brixham, which has been at the centre of the area's fishing industry for centuries. Lyme Regis, with a historic cobb and harbour area. Dartmouth, a unique costal town with a cobbled market which supplies fresh local produce.
It's wonderful on toast (serve with a wedge of lemon) - smoked roe doesn't need cooking. Use it as the base for home-made taramasolata. To make this, the smoked roe needs to be peeled then mashed with garlic, lemon juice, olive oil and breadcrumbs to make a rich paste.It freezes well, but because it is cured with salt, it never freezes rock hard, so don't think it has defrosted!
